Yesterday, I was at home earlier than Andrea. I knew he would have been at home late really tired and a little bit stressed. So I wanted to cheer him up.
I arrived at home at 19,30 it’s quite late considering the Swedish time.
But we had a wonderful sunny, warm day (still in the swedish measurement), and I felt full of energy. So I decided to do something funny to eat. What’s it funnier than ”fast-finger-tasty food”?
So as usual I tried to invent something different. Sometimes my experiments have been turned into a disaster. But this time…Ohhh!!! It was delicious!
Chicken croquette with home made chili sauce
(Serves two)
For the chili sauce
1 small red pepper
½ fresh red chili pepper (even more if you like spicy)
½ red onion
100g tomato sauces
½ cup of water
salt
olive oil
1 tsp paprika
For the chicken
300g chicken breast fillets
4 cups of breadcrumbs
a couple of springs of fresh parsley
1 egg
salt
2 tbsp white sesam seeds
Preheat the oven to 200°.
In the mean time chop the onion and put into a saucepan with oil and a ¼ of cup of water.
Chop the pepper and the chili pepper in small pieces. When the onion it will be soft put together the pepper. Let it cook for 2-3 minutes. Add the tomato sauces and let it cooked gently heat for 20 min, add the cup of water and stiring once in a while.
Chop the chicken breast in small pieces (3-4cm x 1cm). Mix the breadcrumbs with sesame, salt, and chopped parsley.
Dunk the chicken into the beaten egg and transfer them to the breadcrumbs mix.
Heat two spoon of olive oil in a large frying pan.
Fry the chicken each side till golden. Put the pan into the oven for 5’ into the oven. (If you can’t use the same pan, use a baking pan with baking paper).
When the sauce it will be ready, you can taste it for the salt and add some paprika.
Let it cool off into a bowl of cold water.
Keep the chicken warm till you will serve it.
