“An apple a day keeps…” No! I won’t start a post about cookies and apples with this famous sentence…
I didn’t decide to make cookies with apples because their are healthy.
I tried to bake my favourite cookies, in Italy the name is “Cuor di Mela” we can call it “Apple-Heart cookies”, just because I like them a loooot!
The first important thing is: deciding the variety of apple you prefer.
It is not easy recreate a commercial cookies and maybe it is better the home made version (in my opinion). I took a look on the web and I found some recipes. I chose one and…I modified it! Of course!!
And this is the result. Not at all like the originals but still really good. They seem more like small apple pies. And the smell of cookies is ten tousand better than the commercial version.
The best it is that you can enrich the recipe with everything you like!!
I added some hazelnuts. Ummhh crunchy and tasty!!!
And I tested them or….(maybe it is better say) I tasted them with some milk…perfect!!

RECIPE
PASTA FROLLA
100g butter
100g sugar
2 eggs
220g flour
50g potato starch
1 tsp yeast
APPLE-HEART FILLING
2 apples (renette)
10 hazelnuts
2 tbsp orange marmalade
cinnamon
Cream the butter with the sugar, then, mix with flour, potato starch, yeast, and the eggs. Combine the ingredients, handling them as little as possible to keep the butter from melting. Let the dough rest for at least an half an hour in the fridge.
Preheat yuor oven to 170-180°C (350 F).
Chop the apples in small chunks and cook them in a pan with cinnamon since they will be soft. Using a rolling pin bash the nuts up to a fine texture. At the end, add the marmelade and the nuts into the pan. Remove from heat and let it cool.
Flatten the dough between a quarter and half inch thick, cut it with a disc shaped.
Prepare a oven pan with a baking paper, put one disc, fill it with 1 tea spoon of apple-heart filling and cover it with another disc.
Bake in the oven for 15-20min. After ten minutes turn the cookies upside down.
Enjoy it!
